Crispy Balsamic Thyme Potato Torte

Prepare the Potatoes
Preheat oven to 200°C (400°F). Grease a 20–23 cm (8–9 inch) round baking dish or ovenproof skillet.
In a large bowl, toss potato slices with olive oil, balsamic vinegar, thyme, garlic, salt, and pepper until evenly coated.
Layer & Bake
Arrange potatoes in overlapping layers in the prepared dish, forming a circular torte pattern.
Sprinkle Parmesan cheese over the top if using.
Cover loosely with foil and bake for 25 minutes.
Remove foil and bake for an additional 20–25 minutes until the edges are crispy and golden brown.
Serve
Let cool 5 minutes before slicing to retain shape.
Garnish with fresh thyme sprigs and a drizzle of balsamic reduction if desired. Serve warm.
