Crispy Balsamic Thyme Potato Torte

Ingredients
For the Potatoes
900 g (2 lb) Yukon Gold or red potatoes, thinly sliced (about 3 mm / ⅛ inch)
2 tbsp (30 ml) olive oil
2 tsp (10 ml) balsamic vinegar
1 tsp (5 ml) fresh thyme leaves (or ½ tsp dried)
1 clove garlic, minced
Salt and black pepper, to taste
50 g (¼ cup) grated Parmesan cheese (optional)
Optional Garnish
Fresh thyme sprigs
Drizzle of balsamic reduction
