Step 1: Cook the Meat
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large skillet, cook the ground meat with the minced onion until browned. Drain any excess fat.
Step 2: Build the Sauce
Stir in the Manwich sauce, beef broth, and diced tomatoes. Bring the mixture to a boil, then add the pasta. Cook until the pasta is tender.
Step 3: Add Creaminess
Lower the heat and stir in the corn and cubed Velveeta. Mix until the cheese is fully melted and the sauce is smooth.
Step 4: Bake
Transfer the mixture to the prepared baking dish. Sprinkle shredded cheddar evenly over the top.
Cover and bake for 15–20 minutes, until hot, bubbly, and lightly golden.
Step 5: Serve
Let the casserole rest for a few minutes before serving. Enjoy warm—and don’t be surprised if everyone goes back for seconds.
